Week four of Veganuary

This will be the last bit on #veganuary.
It didn't end on a high note, as can be seen below.

It was definitely a worthwhile excercise, to participate, though not going 100% in on it. I like to think it is possible to do so in future.
We will certainly be attempting to eat as closely to vegan diet as possible, as we were prior to this but, evidently, not as well as we could have.

Day 23 Non-Vegan.

Fish Pie.

Day 24 Pea and Leak Soup

This hasn't got a recipe attached to it, this was somewhat thrown together to use up vegetables that were sitting in the fridge.
Lots of tasty vegetables, diced and some cream added in (Plantlea). Then blended to a smooth texture.
Delicious.

Day 25 Burns night, not vegan.

Although this dish was not vegan, I was shared a link to a very good Vegan Haggis

Day 26 Stir-fry

Tofu 'chicken' bites with brocoli, leek and noodles. Absolutely delicious.

Day 27 Tofu and Pineapple Fried Rice

This was a delicious dish, very very simple and tasted great.
The tofu was marinated in BBQ sauce and cooked in the oven for a short while. Mixed vegetables were cut into small pieces and fried. Tofu cut into 1cm cubes and the pineapple wedged. Mixed all together in the frying pan for a few minutes.
Brown rice was used.
Dish was topped with some tamari.

Very very tasty this was, if a bit different to what we'd normally have.

Noodles with left-over haggis and mixed mushrooms

Day 30 Non-vegan

Meal out, spaghetti bolognese

Day 31 Sausage Casserole

Linda Mac sausages with puy lentils in the vein of Pritchard's sausage casserole (Dirty Vegan, p. 154.)
This was very tasty, the puy lentils were a nice change.
